When it comes to Japanese Ramen, we are spoiled with a huge variety of choices. The scene has exploded since the craze initially started in Klang Valley some decade and a half ago.
In recent years, this particular segment of Japanese cuisine stabilized somewhat with only a few newcomers popping up every now and then, one of the latest being Ramen Hitoyoshi, an outlet that caught my attention while finding ourselves looking for a lunch spot at Paradigm Mall in PJ a couple weeks ago.

Ramen Hitoyoshi originated from Singapore, while many may find the idea of Japanese ramen not being from a Japanese franchise a deal breaker, I usually prefer to judge the food by its taste instead of the narratives, after all, haven’t most of us got disappointed by good stories revolving around food before?
The menu here is not entirely different from a typical ramen restaurant, there’s tonkotsu (pork broth ramen) with a variety of ingredients to choose from, including chasiu, aburi chasiu, special chasiu, ajitamago (egg), seaweed, spring onion, black fungus, and so forth. Additionally, they also offer some rice dishes, and sides such as gyoza, takoyaki, unagi, and even ebi fry (fried shrimps).

We ordered a bowl of their Garlic Tonkotsu with All Toppings, and taking advantage of their promo for the period, a bowl of the sake chahan (fried salmon rice dish). You also have the option of getting the ramen with original flavor, or to make it spicy.
The ramen turned out to be quite suitable for our liking. The broth was rich yet not overly saturated, with a salt/spice level that isn’t overpowering like many other places that I’ve experienced recently. The different types of chasiu here each has their unique texture but tastes equally satisfying, tender, fatty, and full of flavor. The entire bowl came together quite well indeed.

The experience for the hot stone rice dish was unfortunately not nearly as good as the ramen, it looked fine, but the taste profile was simply overpowered by the abundance of mayo. Perhaps we should have scooped most of it out before stirring the bowl, but I think we’ll just order another bowl of noodle next time.
We also had a portion of deep fried gyoza to share, and I’m happy to report that it turned out to be one of the better gyoza we’ve tried. Someone once said if you want to make anything better, just deep fried it, can’t say I disagree in this instance (but I’ve yet to try deep fried MARS bar)..

How to judge if the Ramen broth isn’t too rich? When you can drink at least half portion of it, LOL.
