I’m not crazy about patin but it is very nice in soup, cooked with chou chai (preserved vegetables) with lots of ginger and traditional Foochow red wine. I don’t know what the other fish is – looks familiar. It may be the one I always ordered at a restaurant here – I just called it the ugly fish. LOL!!! Ugly but so delicious!
