Hi - the reason why Malaysia and Singapore food is so similar is not because many Singapore dishes originated in Malaysia. Rather it's due to their shared background, history, culture in Malaya, i.e. the long time period of centuries before the messy 1950s and 1960s independence/separation issues. Malaya rather than Malaysia, it's an important difference.

Like you, I am keen on celebrating both the similarities and differences in the food of both countries.

From a Singaporean whose favourite foods are (Penang) CKT, (Penang) laksa and (Singapore) Hokkien mee

Oh this is what we call the Bak Chor Mee, originated from the Teochews in Singapore. Very comforting food for many Chinese Singaporeans. And with a touch of vinegar makes it very shiok. The famous one is in Crawford Lane, near Lavender MRT. Anyone who wants to know the direction can ask me. :D
